Pancakes are a major deal in my house on Sunday mornings, I am always trying to think of new and creative ways to sneak something healthy in them without the kids knowing! One fruit we struggle to get in my son because of the consistency is Bananas, so I came up with this recipe and he loves them! They are very easy to make and you can make a double batch keep on hand for during the week with school!
1 cup of mini chocolate chips from Enjoy Life
1 cup Milk
2 tbsp melted butter or Vegetable Oil
1 1/2 cups of Bobs Red Mill Gluten Free/ Dairy Free Pancake Mix
1.Preheat Skillet to medium heat.
2. In a bowl whisk together milk, eggs. banana, and melted butter or oil. Add pancake mix and whisk until smooth, once mixed add in your chocolate chips.
3. For each pancake pour 1/4 cup batter onto hot skillet, cook until the top is bubbly about 3 minutes!
Remember you can cook a double batch of these and keep them for the week or freeze them to use another morning when you don’t have as much time!
