I am 100% Italian and when I found out both myself and my kids were allergic to gluten and dairy I felt like my life was over. I have spent the last couple of years trying to replicate my families old school Italian recipes and make them Gluten and Dairy Free, which in the beginning was not an easy task! I have slowly found some great breadcrumb alternates for my Italian cooking after much trial and error. My Favorite by far Italian style bread crumbs is by Aleia’s Italian Style Bread Crumbs. They are amazing and don’t leave the meatballs all mushy like some Panko Style Breadcrumbs do.
The other great thing about these meatballs is that you can bake them in the oven and freeze them for nights you don’t have hours to cook your family an elaborate meal.I am not lying when I tell you that these Make Ahead Meatballs are life savers. We all have those days where we don’t even think about dinner until dinnertime – and maybe we are tired or lazy or just don’t feel like cooking. And that is when the takeout usually happens. 4lbs of Meatloaf Meat Mix ( Beef, Veal, and Pork)
4 cloves garlic, minced
1 onion chopped
1 cup of Aleia’s Italian Style Bread Crumbs
1 tablespoon chopped fresh parsley
1 Tablespoon dried oregano
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
1.Preheat oven to 400 degrees. Line two ceramic baking sheets with parchment paper and set aside.
2.Combine all ingredients until well mixed. Shape mixture into equal sized balls, about 2 tablespoons each. When shaping balls, don’t pack them too tightly or they may become tough.
3.Arrange on the lined baking sheets, about 24 per sheet. Bake in the oven for about 20-30 minutes, or until cooked through.
4. They can be served right away or freeze for later. Allow them to cool completely before freezing. After cooling, separate into desired portions and seal in freezer bags or food saver bags and freeze.
